Good morning! Do you like oatmeal? I eat it nearly every day and was looking for variety. I also wanted something that is easy to pack as a snack. I found this recipe for baked oatmeal muffins on Momables.com (I think I first found it on Pinterest) and gave it a try.
The recipe is flexible so that you can use different ingredients – for this first try, I used frozen blueberries, craisins, and sliced almonds. Next time I might use a banana and walnuts, and reduce the maple syrup in it because the fruit makes it sweet enough. I could have used pretty much any kind of fruit that was fresh, frozen, or dried. That’s key for people who don’t like to eat the same thing everyday. I will probably make some sort of baked oatmeal once a week.
Here’s the finished product. I don’t have a cupcake tin, so I just baked it in a Pyrex. When it cooled, I just put on the Pyrex lid and popped in it the fridge. I got about 12 servings out of it.
What’s your favorite way to eat oatmeal?
Yum! I have a bag of craisins leftover from thanksgiving that I need to use up, and this might just be how I do that! Thanks for sharing.
I hope you like it, too!
This sounds like a brilliant idea!! I get so tired of my plain bowl of oatmeal!
Right?! It’s nice to mix it up every now and again.
I love my oatmeal. Its my daily breakfast since the last 2 years! 🙂
Your recipe is great Wendy! XO
Well, it’s not really my recipe…but I’m glad you like it!
I love oatmeal. I mostly eat it with butter and brown sugar but am trying to get better about eating it with just blueberries and slivered almonds. I’ve been seeing so many recipes for baked oatmeal. Will try it out soon.
