Good morning! It’s just a few days before my half marathon so I researched carb loading. I have no idea if I’m doing it right, but it’s kind of a relief to stop worrying about macros and calories for at least a few days. Here is what I’m eating this week:
Sweet potatoes sliced up, sprayed with olive oil and baked with 21-spice seasoning. These are pretty tasty, although I’d have liked to get them crispier. I’ll work on that.
Whole grain pasta with veggie sausage. The pasta sauce has two servings of veggies per half-cup, but I still added in some spinach. This was really tasty and I’ve made enough for the dinner every night this week.ย It’s cheap, too – with coupons, the pasta was $1.17 and the sauce 40ยข.
Today’s run:
I popped on the treadmill while my sister and her husband did Plyometrics from P90X. I joined them for the cool-down and stretch and boy did I need it because my calves were SORE. From what, who knows, but the stretch helped a lot.

I seriously believe that carbo loading was the best part about running a marathon. It was very convenient to be in San Francisco– sourdough bread everything, linguine and clams, you name it!
Those sweet potatoes look great! I always eat a baked potato the night before a race ๐
i didn’t know you should carb-load before marathon. i am a carb addict maybe i should train for marathon.
if you can find asian sweet potato or even the purple ones, just put them in the toaster oven for 40 min and you will get most delicious wholesome snack. i love it for breakfast, too. ๐
