Baking attempt: coffee cake

Happy Monday! How’s everyone doing during lockdown? I, like countless others, have started baking.

This weekend, I attempted coffee cake. I love coffee cake! When I was working in an office (and not in my pajamas at the dining table), I often ordered coffee cake from Starbucks. Like, often.

I’ve seen many copycat recipes, so I thought it would easy to try to make at home. But! I ended up using three different recipes. It was still pretty easy!

First recipe:
Cake portion from King Arthur’s Pineapple Upside Down Cake recipe: I used this recipe when 유씨 requested a pineapple upside down cake. I thought the cake tasted like Starbuck’s coffee cake, so I used this as the base. I added an extra tablespoon of butter.

Second recipe:
Filling from King Arthur’s Cinnamon-Streusel coffee cake recipe: sort of. It seemed like way too much filling for the amount of batter I had, so I just mixed 1/4 cup brown sugar with a teaspoon of cinnamon. I put half of the batter in a baking dish, poured this filling on top, then the rest of the batter.

Third and most important recipe:
Baker Betty classic streusel topping: the streusel is the most important part of the coffee cake! This recipe was perfect! I spread it thickly on top of the batter. I have a lot left over, so next time I cut the portions to half.

And the final product:

This tasted better than the Starbucks version, I have to say. The cake was moist and the streusel melted into it perfect. It would have been perfect, except the edges (and only the edges) got a little burnt. I like the added texture from the crust that formed, but maybe some people wouldn’t. I don’t know why that happened or how to prevent it if I make it again.
